My girl would crucify me if I spent a thousand + on a bike like I want to. I love working with things and thought this would be a interesting way to create my own bike. My only problem is I just got into mountain biking and obviously know very little about it. Any suggestions or previous experiences with this would be extremely helpful.

Are you sure this is cheaper? I know a few people who make a living buying whole products, such as cars, taking them apart and selling the pieces individually, whole total being more than cost of car.
I suppose it does give you the advantage of being able to buy your bike bit by bit. Problem is, bike parts aren't designed to be interchangeable, so you'd have to find a way to be able to buy every single part of the same bike model, which is tough.
Personally, I'd recommend buying a second hander of E-bay, then upgrading it, as this will be far cheaper and give you something nice and custom =D
